About unit

The Technology Dairy Unit serves the needs of the dairy sector in R&D&I, industrial training, dairy education and inter-institutional linkage for the development of the region. It combines the technological resources of the Colonia La Paz branch and the Bachelor's Degree in Dairy Science and Technology. It carries out R&D&I projects, analytical services, technical advice and specific developments for companies. It has specialized laboratories and a pilot plant for small-scale dairy production trials.

This unit offers the following services:

  • Physicochemical, sensory analysis and specific analytical determinations (lactose, free fatty acids, glass transition temperature, among others).
  • Microbiology applied to ingredients, dairy products and industrial processing lines.
  • Process performance improvement.
  • Design and development of new products and processes at pilot scale.
  • Process and product quality evaluation.
  • Technological aptitude studies (coagulation, thermal stability, solubility).
  • Product safety and alteration studies. 
  • Development of ingredients, functional nutritional formulations and product-process interaction studies.
  • Addition of healthy components to dairy products.
  • Tests using pilot plant production lines (fluid milks, cheese, ice cream, yogurt, dulce de leche, milk cream, butter, powders and nutritional formulations).
