Dairy Science and Technology Research Group

The Dairy Science and Technology Research Group aims to analyze topics related to the chemistry, transformation, and processing of milk and its components. To this end, we develop internally and externally funded projects, with an emphasis on engagement with society and industry. Our approach is applied, seeking that the outcomes of our research directly correspond to the knowledge and/or technology transfer needs at both national and international levels.

  1. Chemistry of milk and its components
  2. Technological aptitude of milk for transformation
  3. Dairy technology
  4. Development of dairy products and ingredients
  • New generation of dairy ingredients
    Participants: UTEC
    Funding: UTEC

  • Comparison of pasture-based milk production systems with different calving seasons
    Participants: UTEC
    Funding: INIA - UTEC

  • Study of the seasonal variation in the profile of fatty acids beneficial to human health in milk from supplier producers, its relationship with the production system, and with the quality of two final products: butter and cheese
    Participants: UTEC, UDELAR
    Funding: UDELAR

  • Technical validation of a kefir ice cream prototype
